šŸš What to expect

The journey to one of the most luxurious lodges in Australia begins at Sydney Airport, where guests board a private, air-conditioned helicopter outfitted with comfortable seating, ample legroom, and large windows to ensure every passenger enjoys a spectacular view. Noise-cancelling headphones provide for a calm experience as you take flight.

After liftoff, passengers are treated to aerial views of Sydneyā€™s CBD, the Sydney Opera House, and the Sydney Harbour Bridge.

The flight path takes you north along the Central Coast, where rugged cliffs meet the ocean, and further inland toward the green landscapes of the Hunter Valley. Itā€™s all about travelling in style while getting some of the best photo opportunities of your life. The private and flight lands at Tower Lodge after roughly one hour in the air.

Upon arriving at Tower Lodge, you will be greeted by a refined yet warm and inviting atmosphere that perfectly complements the lodge's rustic-modern architectural design. Tower Lodgeā€™s restaurant, led by Chef Anthony Fullerton, is where youā€™ll enjoy a three-course gourmet lunch.

Begin your meal with handcrafted starters such as the crab and prawn arancini paired with black garlic aioli, or the heirloom tomato salad with buffalo mozzarella, basil, and extra virgin olive oil. For those craving something a bit heartier, the pan-fried potato gnocchi with kale, shallots, and broccolini makes for a great choice.

This is followed by the mains, where you can choose masterful dishes such as the signature Nioka Black Angus Beef, aged and grilled to perfection over a Mibrasa woodfire grill, accompanied by a porcini mushroom jus. The Australian White Lamb Shoulder, slow-braised and served with kipfler potatoes and buttered broccolini, is just as tantalising. Seafood lovers can enjoy the prawn and white fish cappelletti in lobster bisque.

End your meal on a sweet note with desserts like the bitter chocolate tart with pistachio gelato or the traditional vanilla bean crĆØme brĆ»lĆ©e, served with Pedro XimĆ©nez-soaked prunes. For those who prefer a cheese course, the Hunter Valley Cheese Factory Assorted Selection includes artisanal cheeses paired with muscatels, fig paste, and crackers.

After lunch, guests can choose between a wine or whiskey-tasting experience. Held in Tower Lodgeā€™s iconic library, the Sensorial Wine Tasting is guided by a private wine educator.

You will sample seven rare or vintage wines, including back vintages from renowned Hunter Valley producers such as Brokenwood, Tyrrellā€™s, and Lakes Folly.

Each wine is expertly paired with locally made cheeses or handmade chocolate bonbons to accentuate its unique flavor profile. Using the Le Nez du Vin aroma kit, participants also learn to identify wine characteristics by scent, making this both a sensory and educational experience.

For those with a preference for whiskey, the Tower Whiskey Distillery features a sophisticated tasting flight.

Guests can sample four small-batch, single malt whiskeys, including the No. 3 Shiraz American Oak and the No. 9 Fortified French Oak. A host guides participants through the whiskey-making process, sharing the story behind Tower Lodgeā€™s exclusive creations.

After a day of indulging in food and drink, you and your guests will board the helicopter for the return flight back to Sydney, providing you with one last chance to enjoy the sights below.
